Today’s Eats :: Healthy Banana Oatmeal Cookies

These are my go-to when I’m in the mood for a snack but I don’t want to be unhealthy.  My family hates them because they are so banana-ey, but if you like bananas, they’re amazinggggg.

Bonus: they only take 5 minutes to whip up, and 15 more to bake.

  • 2 ripe bananas
  • 1 cup quick oats
  • 1/2 cup chocolate chips
  • heaping spoonful of peanut butter

I also like to make them with pecans instead of chocolate chips, but then they are not sweet at. all. Whatever floats your fancy.


Today I made pomegranate scones. They were delicious. Tomorrow I will be healthy.

Happy Thursday, ya’ll. (: This picture is relevant because that’s me declaring my major…a degree in which I will officially earn in May!  College is great, but it’s four small years in an entire life I have been given.  What’s next? The World Race!  In September, I will be embarking on an eleven month-long mission trip that reaches to three countries in Africa, four countries in Eastern Europe, and four countries in Asia.  This summer, after I graduate but before I leave, I am going to focus on working, fundraising and preparing to go.  

I have my life far from planned out, but hey. We’re only asked to do the next thing. One step at a time.

Mid-Week Supper: Stuffed Sweet Potatoes

This is one of my latest clean eating suppers.  It is so so tasty, and equally as easy.

  • 4 medium-sized sweet potatoes
  • 1/2 cup plain Greek yogurt
  • 1 tsp olive oil
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 2 tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. cumin
  • pinch of salt
  • 1 1/3 cups canned black beans, drained and rinsed
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro

The seasoning amounts are just guesses…season to taste.  Throw everything together, let it simmer awhile on the stove, bake the potatoes in the microwave, and put the mixture on top of the potato, with cheese if you like.  The picture isn’t great because I took it. That’s enough explanation. But I promise it’s tasty!

I signed up for my second half marathon today!  YESS!  It’s in April and I’m already excited and can’t wait. (: (:

  • finishing a long, hard run, and feeling really good about how it went
  • waking up in the morning knowing you got enough sleep
  • cleaning the whole kitchen, and doing a damn good job of it, too. (not a crumb to be found)
  • tight hugs
